Sweet Cravings? Mug it up!

It's the new year, and we're all most likely deciding to eat better/exercise more/take better care of our health. But sometimes you get a sweet craving and want SOMETHING...fruit cuts it for me at least 90% of the time, but that other 10%? Nope; gotta have something more. And for me personally, I'd rather have a piece of good cake/cupcake than chocolate or pie or candy. Here's where this little beauty comes in:
A cake-in-a-mug! 1 serving, slightly sweet, eaten right away...I don't do this ALL the time, but it does hit the spot when I do give in to the sweet temptation.
Easy Vanilla Mug Cake
Equipment: ceramic mug, fork
Ingredients:
1/4 cup plus 1 1/4 teaspoons all-purpose flour
2 Tablespoons sugar
1/4 teaspoon baking powder
dash of salt
2 Tablespoons butter, melted
3 Tablespoons milk
1/2 teaspoon vanilla (a do a few drops of almond extract, then fill rest with vanilla)
1 teaspoon sprinkles (I omit this all together)
Instructions:
Add flour, sugar, baking powder, and salt to a microwave safe mug and stir/whisk with fork until well blended, breaking up any clumps.
Stir in milk, melted butter, and vanilla extract until smooth (use fork for this as it helps get any lumps out), being sure to scrape bottom/sides. Stir in sprinkles if using.
Cook in microwave for 70-90 seconds or until cake is just set, but still a bit shiny on top. Allow to rest in microwave for 1 minute before consuming.
I typically eat directly from mug.
